Hi Everyone, I am sorry I haven’t posted in a long time, I will be trying to write and post more but life is busy! This is my very long awaited brownie recipe for the most delicious gooey brownies, it’s a recipe I have used for many years and tried and tested with many people from old friends at my old riding stables to family and now even work friends (which I am taking this batch to share with them tomorrow or yesterday for you reading this!)

I got about 25 generous chunks of brownie out of this recipe and that’s about average!

What you will need for this: Ingredients:

Yes it’s in grams, sorry Americans you can convert to oz and cups!

  • 225 grams of butter
  • 300 grams of caster sugar
  • 150 grams of light brown sugar (you could use 450grams of just caster if you wish but I find using a bit of both, adds to the flavour and the brown sugar gives a really nice rich taste!)
  • 140 grams of chocolate (use dark if you have it but I am using milk coz that’s what I have baking wise right now)
  • 4 free ranged medium sized eggs
  • 55 grams of coco powder
  • 130 grams of plain flour
  • a splash of vanilla extract
  • enough chocolate chips that you measure with your heart!

What you need: Baking Equipment:

  • A baking tray lined with baking paper, (this is 38cm in size, it’s not very deep so if your using a deeper dish use a smaller tray, and I use a tiny amount of butter to the edges and corners to make your baking paper fit nice and snug!)
  • A pan and bowl for melting butter (you could melt butter in a microwave safe bowl at 30 second intervals but I like melting over the stove),
  • a wooden spoon, a big mixing bowl
  • a sieve
  • a few small bowls to measure your ingredients ( yes I did not include the bowls in the picture and no you don’t need measuring spoons)

Step 1 Measure all your ingredients out, from left to right, coco powder, caster sugar, brown sugar, butter in heat safe bowl, 4 eggs cracked and splash of vanilla extract, chocolate chips and chunks and chocolate to melt and flour.

Step 2 Melt your butter. I am doing this in a heat safe bowl over hot water in a pan on the stove but feel free to do this in a microwave safe bowl in the microwave at 30 second intervals stirring it between. Which ever way works I am doing it over the stove.

Step 3 Take your melted butter and put the chocolate in the mixture (off the heat) and keep stirring until combined and no lumps. (Yes the chocolate will melt with the heat from the butter it does not need to be on heat however if the butter has cooled too fast and lumps still put in the microwave for 30 seconds to reheat.

Step 4 Combine dry ingredients into your big bowl, don’t forget to sift the flour and then give a quick stir and flatten any coco powder/sugar lumps. Beat your eggs and add and combine into dry mix. Then combine your chocolate and butter mix until nice and smooth and glossy mixture.

Step 5 Add your chocolate chips and chunks. Measure these with your heart and give a quick stir to equally distribute.

Step 6 Place mixture into baking tray and place into oven. Oven should be 190 degrees on fan or whatever that converts to otherwise, for 30 minutes.

Step 7 Wait for 30 minutes for to cook and do the not very fun job of tidying up and cleaning dishes or eat the leftover batter out the mixing bowl and scroll through TikTok, choice is yours!

Step 8 wait for it to cool and be very impatient!

Step 9 Cut into slices of your choosing. I did quite generous slices you can do bigger or smaller slices however generous you wish to be. don’t forget any ‘mistakes when cutting like dropping one on the floor or breaking one it is your to eat before you give them away!

Step 10 the fun bit! Present to your friends. and eat them!
